Ek maak elke sondag oggend muffins vir my gesin.  Kry vanoggend hierdie lekker resep by ChrisM

* 2 cups all-purpose flour
* 1/3 cup light-brown sugar
* 1/3 cup sugar
* 2 teaspoon baking powder
* 1/2 teaspoon salt
* 2/3 cup milk
* 1/2 cup butter — melted and cooled
* 2 eggs – beaten
* 1 teaspoon vanilla
* 1 package (350 grams) chocolate chips
* 1/2 cup walnuts or pecans — chopped

Grab your muffin tray, grease it up and set the oven to 200. Take a large bowl, place the flour, sugars, baking powder and salt together and stir. In a second bowl, stir the milk, eggs, butter and vanilla until they’re blended.

Make a small ‘hole’ in the center of the dry ingredients, add the milk mixture and proceed to stir until all ingredients are blended. Add chocolate chips and nuts to the mixture.

Fill the muffin tray with batter and bake for roughly 15 minutes. Remove the muffin tray from the oven, place on a cooling tray and allow to cool.

Ek dink ChrisM se resep kort kakao.  Ek sal so 3-4 eetl ingooi, afhangend hoe “mud cake”-agtig jy dit wil hê.  2/3 k suiker is baie.  As jy van minder soet hou, is so halwe k reg.

My eie muffin resep is:

  • 2 k meel
  • 4tl bakpoeier
  • suiker na smaak
  • 2/3 k melk
  • 1/3 k olie
  • 1 eier
  1. Sif droë bestanddele saam
  2. Meng die olie en melk en klits saam met die eier
  3. Meng die nat en droë bestanddele
  4. Skep in ‘n muffin bak
  5. Bak vir 12-15 min @ 180

Ek maak ook gereeld “Butter Paratha”, ‘n indiese soort pannekoek wat jy kan vul met allerhande goeters, amper soos ‘n wrap.

  • 4 k meel
  • 3 eetl botter (gesmelt)
  • 1 tlpl sout
  • 1 1/4 k water
  1. Maak ‘n gaatjie in die middel van die droë bestanddele
  2. Gooi die water/gesmelte botter in.
  3. Knie vir so 5 min of tot n rubberagtige tekstuur.
  4. Laat staan vir 20 min
  5. Maak balletjies van die deeg, so ongeveer tennisbal grootte.
  6. Rol op ‘n oppervlak wat met meel betrooi is, tot so groot soos jou pan; lekker dun
  7. Bak/braai in ‘n pan vir so 30 sekondes aan ‘n kant.

Alternatiewe Paratha met aartappels en hoender:

  •  2 POTATOES, peeled and cooked
  • 1 CUP FLOUR
  • 2 TSP SUGAR
  • 1 TSP ANIS SEED
  • 1  KG CHICKEN DRUM STICKS
  • 1 ONION, chopped
  • 2 CLOVES GARLIC, mashed
  • 80 GRAM BUTTER
  • 300 GRAM TOMATO PUREE
  • 1 CUP CREAM
  • 1/2 CUP YOGURT
  • 1 TSP PAPRIKA POWDER
  • 1 TSP CHILI POWDER
  • 1 TSP GARAM MASALA  
  1. Mash the potatoes with half a cup of hot water.
  2. Add the flour, sugar, anis seed an salt to taste and knead to a dough.
  3. Roll the dough out to 6 thin circles and fry them in hot oil or ghee, 1 1/2 minute per side.
